So I thought that jurisdiction over the defendant in a criminal case was obtained by arrest, not by service of process. Is this an Arizona thing?

And what is Giuliani on about with a deadline after which the charges have to be dismissed?

Oh yeah, the Georgia Rhodes v McDonald case where she was sanctioned also had the issue of Orly filing for a stay to Rhodes's deployment without Rhodes's permission, or even knowledge. If a defendant wants to question the trial judge's interpretation or application of the law, wouldn't it be more appropriate to have a hearing without the jury, rather than having the witness testify in open court in front of the jury?

Yeah, initially a sanction of $10,000, after which Orly (or really her University of Chicago JD alleged inamorata) doubled down with a motion for reconsideration, to which the Judge responded by doubling the sanction amount.
